Ingredients:

1 cup rice flour

1/4 cup wheat flour (for crispiness)

1 tablespoon ghee (clarified butter)

1/4 teaspoon carom seeds (ajwain)

Salt to taste

Water (as needed to form dough)

Ghee or oil for deep frying

Instructions:

Prepare the dough: In a mixing bowl, combine rice flour, wheat flour, carom seeds, and salt. Add ghee and mix well. Gradually add water, little by little, and knead the mixture into a smooth dough.

Roll out the dough: Take small portions of the dough and roll them into small, thin circles (about the size of a cookie). Use a fork to prick the rolled-out dough to avoid puffing during frying.

Fry the papdi: Heat ghee or oil in a deep pan. Once hot, fry the papdi in batches until they turn golden brown and crispy.

Drain excess oil: Remove the papdi from the oil and drain on a paper towel to remove excess oil.
